La ceba tamb\u00e9 la tallem en *brunoise molt fi, de manera que totes les hortalisses tinguin aix\u00ed una grand\u00e0ria similar al de la carn, perqu\u00e8 no destaquin sobre ella. Les escalfem amb oli d&#8217;oliva durant deu minuts a foc lent. Afegim la carn picada. Quan la carn picada hagi canviat de color, agreguem el vi blanc i deixem que s&#8217;evapori mentre removem.<\/p>\n\n\n\n<p>Despr\u00e9s agreguem el tom\u00e0quet picat en trossos un got d&#8217;aigua i el concentrat de tom\u00e0quet, deixant que tot es cuini durant uns vint minuts m\u00e9s. Encara que ja aparent estar fet, la tradici\u00f3 per a fer una bona salsa bolonyesa exigeix una llarga cocci\u00f3. Per aix\u00f2 nosaltres deixarem que la nostra bolonyesa es cuini a foc lent durant almenys 1 hora i mitja m\u00e9s, totalitzant dues hores.<\/p>\n\n\n\n<p>Perqu\u00e8 no es quedi seca la salsa en tan llarga cocci\u00f3, podem anar afegint aigua, brou o vi quan vegem que s&#8217;est\u00e0 assecant molt. Fins i tot hi ha receptes cl\u00e0ssiques que afegeixen una mica de llet.
